Cinsault (SAN-SO) hails from the south of France, and is typically type-casted into a blending role rather than taking the lead...but we believe it can headline. The best part about Cinsault is its versatility, especially come spring. Those cool nights and warm days work great with the cool front palate and comforting back palate of the Cinasult. Great for afternoon sunsets or hikes in the hills.
The grapes for our 2018 Cinsault come from Demetria Vineyard, a biodynamically farmed ranch in the Foxen Canyon region of the SY valley. To make this wine, we hand harvested the grapes and brought them back to the winery where we destemmed all of the fruit. After a short 10 day maceration on skins the fruit was pressed and the juice was put into neutral French oak barrels for 9 months. The shorter aging celebrates the fruitiness and freshness of this beauty.
Our Cinsault shows pretty aromas of flowers, herbs, and bright red fruit. Once you start to drink it, all the cranberries, red cherries and plums wrap up with smoke, violets and black tea notes. The finish is fresh and vibrant, just like these early days of Spring.
