Relax with a dark red wine. Made from 50% Syrah and 50% Cabernet Sauvignon sourced and handpicked from three special vineyards in Santa Barbara County. This red blend encourages you to settle in and get comfortable.
This is our riff on the classic 'Dry Red' blend of Cab and Syrah that was pioneered in Australia. The Syrah this year is sourced from Tierra Alta Vineyard in Ballard Canyon. It’s rich and meaty... full of fleshy mid palate. The Cab is from leafy and herbal with firm tannin and currant-y acid.
To make this wine, the Syrah and Cab lots are hand picked and harvested separately. In the winery, we completely de-stem the fruit and macerate on skins for 2 to 3 weeks. The wines are pressed to American Oak hogsheads (bigger barrels) that are actually coopered in Australia. The wine is aged for 14 months, Making the Time to soften and build complexity.
The result is a deeply concentrated wine full of meat, tar, vanilla bourbon-y char, crushed dark berries and licorice on the nose. The palate is rich, soft, and concentrated with blackberry, iron, and savoriness. The palate has concentrated flavor and a soft mouth feel, ripe with juicy mulberries, tart black currants, mocha, meat, and savory cedar flavors.
